About Our Chef and Founder:

Chef Diana Flores, originally from Honduras, moved to Colorado in pursuit of the American dream!

She graduated with honors as a Pastry Chef from Johnson & Wales in Denver, Colorado. Despite the challenges of the pandemic, she actively participated in both online and in-person labs.

Diana’s passion for food, diverse cultures, family traditions, and community inspired her vision and purpose. This led her to leave her teaching career behind and embark on a new path in the culinary arts. After graduating with honors as a Pastry Chef from Johnson & Wales University, she began working with exceptional individuals and mentors, shaping her own identity.

Gallo Pinto Latin Roots was born from Diana Flores’ dream of uniting people through a variety of Central American meals, all represented in a single bowl of rice and beans. Inspired by The Central American Integration System (SICA), an institutional alliance that initially involved five Central American countries

We also strive to be environmentally friendly by using biodegradable packaging and reducing our waste. We are constantly seeking innovative ways to surprise our customers with a menu that changes seasonally and features dishes from various regions of Costa Rica.

We firmly believe that food is not only nourishment but also a means of expressing our culture and identity.
